The editors of WHERE Canadian Rockies magazine agree with CBC Radio food critic John Gilchrist who calls Fuze Finer Dining (second floor, 110 Banff Ave, Banff, Alberta, 403-760-0853) "the hottest new opening in Banff." We also applaud Fuze for its innovative spirit—this is no ordinary eating establishment. The contemporary dining room is set between a futuristic wall of display wines and a bar constructed of 200-year-old fir lumber salvaged from a Prairie grain elevator. Their presentation room hosts cooking demonstrations and hands-on classes. At the chef's table tasting menus are offered in full view of the kitchen. Exotic spices, wine decanters and Canadian-made Paderno cookware are for sale at the epicurean boutique. Award-winning Fuze chef Gary Dayanandan refers to their restaurant as "upscale casual—we are serious about our food, wine and service, but you can leave your jacket and tie at home." Dishes such as Madras spiced buffalo striploin with Moroccan couscous, and rabbit braised in Thai green curry are testament to what Fuze maître d' Steven Doucette calls "globally-inspired cuisine." Sommelier Anthony Chalmers' 150-label wine list was recently rated in "Canada's Top 100" by Wine Access magazine.
